What are candied almonds?

Candied almonds – also called caramelised almonds – are a popoular snack in many parts of Europe. Unlike sugared almonds with a hard, smooth sugar coating, candied almonds are coated in a crunchy, textured sugar glaze.

Some recipes for candied almonds use egg whites. As we have family members with different dietary requirements who don’t eat eggs, this recipe is made without them, making it both egg free and vegan.

Orange candied almond ingredients

This recipe for orange candied almonds is super easy and only has a handful of ingredients.

You’ll need:

  • 1 and 1/2 cups of natural whole almonds
  • 1 cup white (granulated) sugar
  • 1/2 cup fresh orange juice (juice of 1 orange)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • pinch salt

Method

Line a baking tray with non stick baking / parchment paper.

Juice the orange and add orange juice, sugar, cinnamon and salt to a large, heavy based frying pan. Heat over medium heat, stirring well. Bring the mixture to a gentle boil and cook until the sugar has dissolved.

Add almonds to the pan and stir to combine.

Using a wooden spoon, stir the mixture continuously for around 8 to 10 minutes. The mixture will thicken, becoming glossy at first, then stringy. Keep stirring until the sugar crystalises and sticks to the almonds. (Take care not to let the almonds burn or get too dark – constant stirring is important to help prevent this.)

Tip the coated almonds onto the lined baking tray, separating in a single, even layer, and allow to cool for at least 10 minutes.

This recipe makes one and a half cups of candied almonds (approxinately 12 serves).

Serving ideas

Orange candied almonds are delicious on their own as a snack or served with drinks when entertaining. They also make a great addition to a cheese platter or charcuterie board.

Other ways to use orange candied almonds are as a topping for cakes – especially citrus flavoured cake – and other sweet desserts. Or you can even add them to a salad for extra texture and flavour.

Orange candied almonds also make a lovely handmade gift, especially at Christmas. I like to pop in small glass jars and tie with ribbon.

Storage and freezing

Orange candied almonds are delicious as soon as they have cooled, but will also keep in an airtight container for up to 2 weeks.

Candied nuts are not suitable to freeze as they will go soggy.
